We were recently invited to our first American Thanksgiving.
The husband cooked everything from scratch including two of the biggest turkeys I've ever seen in my life!
There were two huge pies three times the size of what we think is a 'pie', one apple, one pumpkin and this dish, which we were assured was a side, and NOT a dessert!
It is strangely delicious, and well worth a try, I promise!
You'll need:
1 kg, sweet potato, peeled, sliced and sliced into chunks
1/2 cup cream
2-3 tablespoons honey or maple syrup
1/2 teaspoon cinnamon
A pinch of nutmeg
12-20 Jumbo marshmallows or enough smaller ones to cover the top of your mash
Then just:
Preheat the oven to 174C fan forced.
Steam the sweet potato, and mash it well with the ingredients up to the marshmallows.
Smooth into a baking dish.
Top with the marshmallows. I used the enormous American ones as Aldi had them for Thanksgiving a week or two ago, and I was just lucky to find a stray packet! So those I cut in half horizontally and lined up all over the surface of the mash.
Bake for about 20 minutes or until the marshmallows are browning on top.
Serve immediately.
The contrast of the crisp marshmallow tops, the gooey melted marshmallow, and the creamy sweet potato mash is surprising and scrumptious.
You have to try this just once. It's well worth it! Even if it is more like dessert....lol!
