I've posted this in the forum a few times and it's been requested often, and I always have trouble backtracking to find it.
Mimi's Cheaty Pad Thai style dinner
1 packet Pad Thai Rice Noodles (or any rice noodle, in the interests of improvising)
300gms of meat of any kind, including mince. Cut into thin slivers if necessary.
2-3 large handfuls of any sort of greens, sliced finely (or more if you want!). Try Kale, Silverbeet, Wombok, beans, broccoli, brussel sprouts and so on. Whatever is inexpensive at the time.
2 tablespoons soy sauce, or mushroom soy sauce or teriyaki sauce or oyster sauce
Drizzle of honey
1/2-1 teaspoon minced garlic
1/2-3/4 cup boiling water
1 tablespoon cornflour
2 tablespoons oil
Bring a pot of water to the boil and add the rice noodles. Boil for 7-8 minutes or until al dente`. Drain well and set aside.
Bring a large wok or pan up to smoking heat over a hotplate set to high.
Add oil, then the meat, moving it around the pan to brown it well.
Add the veges, and the sauce and herbs to coat them liberally.
Add the drained noodles, tossing everything to combine and heat through.
Sprinkle the cornflour over the top and pour over the water. Use a little more water if you want a more liquid sauce.
Add a little more soy if you wish to colour it up a bit. Drizzle with the honey (not too much...about a tablespoon) and toss well.
Serve immediately.
This makes a quantity that would cost around $16-$20 from a takeaway store, and it's the most ridiculously easy and frugal thing :)
