I took a fancy to those Chia Pods recently.
They're such a quick and delicious breakfast, and so healthy to boot. The texture of the seeds reminds me a little of Sago or Tapoica which we love, but sort of crunchy.
But at nearly $4 each for the Chia Pods, a bit expensive for every day for a good SSer :)
So I've come up with my own version. Maybe if you're a Chia Pudding fan, you'd like to add your recipe too.
This makes almost a weeks worth of breakfasts for me.
You'll need:
1 cup Coconut Juice or Coconut Water
1 cup Greek Yoghurt
3 dessertspoons Rice Malt Syrup
1/2 teaspoon Vanilla Bean Paste or 1 teaspoon Vanilla Extract
1/4 cup White Chia Seeds
Fresh fruit of your choice to serve
Then just:
Whisk together the Coconut Juice, Yoghurt, Rice Malt Syrup and Vanilla. Add the chia seeds and whisk well.
Cover and refrigerate overnight.
In the morning, give the mixture a stir and spoon into a bowl or glass. Add some fresh berries, melon, kiwi fruit or whatever takes your fancy. Drizzle a little more Rice Malt Syrup over the top if you wish.
I find a little of Chia breakfast pudding goes a long way. A 1/4 to 1/3 of a cup of the Chia pudding and some fruit is a great way to start the day. You won't be hungry for hours :)
