Yummy. Easy. Kids can make them themselves.
What's not to like?
For eight half subs...
You'll need:
1 slim French stick, cut into four even pieces, sliced in half, soft inner removed, and diced
3 tablespoons tomato paste
250gms grated cheese (more if you want)
1/2 cup olives, pitted and sliced
3 shallots, sliced diagonally (the long green things)
2-4 slices bacon, salami, leftover roast, diced finely
1/2 capsicum, finely chopped
3 tablespoons olive oil
Cooking foil
Then just:
Preheat the oven to 190C.
Combine the cheese, olives, shallots, diced meat, capsicum, diced soft bread, and oil in a bowl.
Brush the insides of the French stick chunks with the tomato paste.
Divide the cheese mixture evenly between them.
Line a tray with foil, and line the subs up on it, covering them with another sheet of foil.
Bake for 10-15 minutes or until heated through.
Remove the covering foil and bake for a further five minutes to brown.
Serve immediately to hungry hoardes.
Quicker, and a heck of a lot less costly, than that other 'sub' place :)
