Comfort food....Chorizo and potatoes in the microwave

Okay, so this is hibernation food, not healthy.

It's not something you'd eat all the time.

But it's pretty darned tasty. And quick. It's something I had to do, because lo and behold I have no stove. Or oven. Well, I do, but neither are working. So the microwave and slow cooker are my friend. It's amazing what you can do when you have to.

For four servings you'll need:

1kg washed potatoes, cut into 4cm chunks

1/2 cup water + 2/3 cup water more

1 onion, peeled and diced

2 chorizo, sliced (or substitute your favourite spicy smoky sausage such as kabana, knackwurst and so on)

1 1/2 tablespoons brown sugar

3 teaspoons plain flour

2 tablespoons balsamic vinegar

2 teaspoons mustard (any kind is fine)

Salt and pepper

Paper towels

A nice colourful Winter veg to serve with it such as roasted fresh beetroot, roasted capsicum, semi dried tomatoes, steamed greens...whatever you like.

Then just:

Put the potato chunks and water into a large casserole dish that will fit into your microwave oven. Cook uncovered on HIGH for ten minutes. Drain and set aside.

Put the sliced chorizo in one layer on a dinner plate. Cover with a sheet of paper towel and cook on HIGH until crisp and browned. Remove the chorizo, reserving the seasoned oil released by the cooking process.

Add this seasoned oil to the potatoes, along with the diced onion. Cook on HIGH for 4 minutes or until the potatoes are soft, stirring after 2 minutes.

Stir in the brown sugar, balsamic, mustard, seasoning and flour, coating everything well. Add the 2/3 cup water and stir well until combined. Cook on HIGH for 3 minutes, stirring once half way through. Add a little more water if necessary.

Allow to stand for 3 more minutes while you get your plates ready with vegetables and whatnot.

Serve immediately.
